
Today I was convicted about needing to eat (and serve to the family) more proteins and fish, omega-3's, blah blah blah. So I run straight to the grocery store and get some mahi-mahi, among other things. Fighting the urge to just scrounge up some ol' thing out of the fridge for our dinner (it's always just the girls and I, so motivation is quite rare), I took out the mahi-mahi and pan fried it in olive oil and lemon pepper. I made brown rice (adding no white rice at all to cover the texture) and the girls helped me get together a garden salad and some fruit. Voila! Healthy dinner. My girls have liked fish before, but I suppose because of the expense and lack of habit, I just don't make it that often. And tonight they gobbled it up fast and even asked for seconds on the fish and rice! I've got to make this stuff more often.

Very impressive! I'm ALMOST motivated to make some fish myself.... but alas, I keep going back to the same old boring chicken and turkey! So, do you feel better today with all those gorgeous omega 3s?
