Dinner Attempts


So I've tried to put a bit more effort into the food and dinner thing. I've been looking through my new cookbook and am only on recipe #34 out of 365. I like to look at the ingredients and actually read a bit of the recipe to see if I think I'd use it or not. So the other day I tried baked chicken quesadillas with red bean soup. Pretty much I saw a recipe on baked cheese quesadillas with a salsa stoup (if you know Rachel Ray, that's a cross between a soup and a stew), so that got me thinking. I always have red beans (I make them in the crockpot and season them Honduran-style) on hand for our frequent Honduran meals and whatever other night I don't have anything else planned to make. So I threw the beans in a pot and added a bunch of stuff to flavor them up and put a kick in them. And the quesadillas were normal, nothing fancy, just chicken and cheese. So I served it to my husband on a huge plate, the soup in the middle and the lovely triangles of quesadillas around the bowl. Ta-da! And guess what? He actually said it was delicious! Yay! The girls liked the dinner too, though the beans were a bit too spicy for them.


And tonight I'm trying a shepherd's pie. I've only attempted it once before, and it failed. I think it was because I made some silly substitutions (this was in Honduras) and it was gross. It was tomato-based, and tonight's recipe is cream-based. So here's hoping!
